Sautéed green beans and peas

Background
These sautéed green beans and peas go really well with roast lamb or grilled lamb chops. It takes only a few minutes to make this side dish - ideal for a traditional Sunday lunch or midweek supper.
Ingredients
- 2 Tbsp butter or dairy-free margarine
- 1 shallot onion, minced
- 1 tsp white wine vinegar
- ½ tsp cane sugar
- 300g green beans
- 300g green peas
- 4-5 sprigs of mint
- Mint leaves to garnish
- Salt and pepper
Instructions
- Heat the butter in a deep frying pan and soften the shallot for a couple of minutes.
- Add the vinegar and sugar, then the vegetables and the mint. Add 4 Tbsps of water.
- Bring to the boil, then cover and simmer for about 5 minutes, until the vegetables are tender.
- Discard the mint sprigs.
- Season to taste with salt and pepper, and sprinkle with fresh mint leaves.
Tips
