Schezwan fried rice
Background
A veg fried recipe from Indo Chinese cuisine and quite popular in the restaurants around India. It is mildly hot and flavored with a unique blend of sauces. To make this Schezwan fried rice, unique schezwan peppers are used which gives a special citrus flavor to the dish. But in India this spice is not available, so the rice is made with red chilli paste.
Ingredients
- 2 cups uncooked rice
- 1 Tbsp. soya sauce
- ½ Tbsp. vinegar
- ½ Tbsp. sugar
- 2 Tbsp. oil
- Salt to taste
- ¼ tsp pepper powder
- 1 onion finely chopped
- 8 red chillies soaked in warm water and blended
- 1 Tbsp. ginger chopped
- 1 Tbsp. garlic chopped
- ½ cup chopped carrots
- ½ cup chopped beans
- ½ cup chopped capsicum
- ½ cup chopped spring onions
Instructions
- Wash the rice and cook till done, but make sure it is not mushy.
- Add oil to a hot pan and fry ginger, garlic till they turn light brown.
- Add onions and fry till golden brown. Pour vinegar, soya sauce, salt, sugar, red chilli paste and pepper powder. Cook until the sauce thickens. Set aside.
- To the same pan, add little more oil and fry the vegetables on a high flame. Add the thickened sauce, rice and spring onions.
- Mix and stir fry for 2 minutes.
- Serve hot and this can be paired with any Chinese side dish.
