Sweet Chilli Chicken BBQ
Background
There are many ways to create delicious marinades for chicken drumsticks prior to barbecuing them but I think that this Sweet Chilli Chicken BBQ recipe is particularly pleasing. It gives the drumstick skins a lovely crispy quality and the flavour is great. To ensure the chicken is properly cooked through you should first use your conventional oven before finishing off on your barbecue - unless you have a sophisticated one that allows controlled slow-cooking.
Ingredients
- 12 Chicken drumsticks (preferably free-range)
- Marinade: 4 Tbsp Thai Sweet Chilli Sauce
- 1 Tbsp honey
- 3 Tbsp light soy sauce
- 1 tsp crushed garlic
Instructions
- Place the drumsticks in a large freezer bag.
- Mix the marinade in a bowl and add to the chicken pieces. Squidge the bag to cover all the drumsticks with the mixture, then put in the fridge for at least an hour - preferably overnight.
- Preheat the oven to 190°C. Place the drumsticks into a roasting tray and cook for about ½ hour.
- Cook the chicken on your hot barbeque for about 10 minutes, turning frequently until nicely browned.
