Background
This Thai baked fish takes only 10 minutes to prepare and 20-30 minutes to cook. The result is absolutely fantastic – perfect for special occasions or dinner parties. Serve it with steamed Jasmine rice (or this yummy coconut and ginger rice >>) and Thai-style stir-fried vegetables.
Ingredients
- 1 kg whole sea fish (such Cod, Bream, Sea-bass)
- 2 cloves of garlic, pressed
- 1 Tbsp fish sauce
- 2 Tbsp freshly squeezed lemon or lime juice
- 1 Tbsp grated ginger
- 2 Tbsp sweet chilli sauce
- 2 Tbsp chopped fresh coriander leaves
- 1 Tbsp rice wine vinegar
- 2 spring onions cut into thin strips
- Baking paper or banana leaf
Instructions
- Preheat the oven to 190°C.
- Mix the ingredients (except spring onions).
- Line a baking sheet with baking paper or banana leaf, then place the fish in the middle. Pour over the dressing, sprinkle with spring onion and carefully wrap the fish in the baking paper or banana leaf, making a parcel.
- Bake for 20-30 minutes, then carefully unwrap the fish and move it to a serving plate (with the sauce).
- Serve warm with a squeeze of lime juice.
