Bitter gourd fry
Background
Bitter gourd is a common vegetable in Indian cuisine. This vegetable, also known as bitter melon or balsam pear, offers a variety of benefits, both nutritional and medicinal. Bitter gourd is a good source of several vitamins and good for low calorie diet. This vegetable is a natural treatment option for people with diabetes. It is good to include to your menu at least occasionally.
Ingredients
- 250 gms bitter gourd
- 2 Tbsp oil
- Salt as needed
- A pinch of turmeric
- 2 tsp red chilli powder
- 1 Tbsp coriander powder
- ΒΌ tsp cumin powder
- 3 Tbsp grated jaggery
- 2 tsp tamarind pulp
- 1 medium sized onion chopped
- 1 spring curry leaves
Instructions
- Wash bitter gourd thoroughly. Cut off both the ends, cut into half and make thin slices.
- Heat a pan with oil, add the bitter gourd and begin to stir fry for 5 minutes.
- Add salt, tamarind pulp and grated jaggery, mix well. Cover and cook on a medium flame until the bitter gourd is cooked well.
- Add chopped onion, curry leaves and fry on a low flame. Keep stirring in between to prevent burning.
- Add coriander, cumin, red chilli, turmeric powders and mix. Saute for 2 minutes.
- Remove from the flame and transfer to a serving bowl. Serve with hot steamed rice.
