Braised red cabbage with cranberries

Background
A roast duck/goose meal just isn't complete without some lovely braised red cabbage! This recipe is particularly suitable for the winter festivities as it goes well with roast turkey, ham and game too. So this braised red cabbage with cranberries is perfect for Thanksgiving or Christmas.
Ingredients
- 1 small red cabbage
- 1 red onion
- 3 Tbsp dark muscovado sugar
- 1 cinnamon stick
- ΒΌ tsp ground cloves
- Β½ cup dried cranberries
- 1 cup fresh or frozen cranberries
- 1 tsp sea salt
- 200 ml orange juice
Instructions
- Thinly slice the onion and shred the cabbage.
- Put everything in a heavy-based pan and bring to the boil.
- Stir and simmer for 30-45 minutes until tender (more if you want the cabbage really soft).
- Serve warm.
