Vegan oat cookies with goji berries

Background
These vegan oat cookies with goji berries are sugar-free too, so they're ideal for those who follow a health-conscious diets. You can use gluten-free oats too.
Ingredients
- 3 ripe bananas
- 2 cups of oats (gluten-free)
- 1 green apple, grated
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp vanilla
- 2 Tbsp goji berries
- 2 Tbsp sunflower or pumpkin seeds
Instructions
- Preheat the oven on to 180Β°C. Line a baking tray with parchment paper.
- Mash the bananas with a fork, then add the grated apple, vanilla, ginger and cinnamon. Add to the oats and combine.
- Fold in the goji berries and sunflower/pumpkin seeds. You should get a malleable dough. You might need to add more oats.
- Make equal sized balls from the mixture, then flatten them slightly between your palms.
- Put the cookies on the lined baking tray and bake for about 20 minutes until golden brown.
- Let them cool on a wire-rack then enjoy!
