Background
Curry leaves are rich source of Iron and they are often used in seasoning and very important ingredient in south Indian dishes. This powder is a side and goes well with rice and ghee. It also makes a good side for breakfast dishes like Idli or Dosa.
Ingredients
- 1 cup curry leaves
- 2 tsp oil
- ¼ split chickpeas or chana dal
- 2 Tbsp black gram or urad dal
- 1 tsp coriander seeds
- Small piece tamarind
- 4 dried red chilli
- 2 Tbsp dried coconut
- Pinch of asafoetida
- ½ tsp salt
Instructions
- Take a pan and dry roast the curry leaves until they turn crunchy on low flame. Set aside to cool.
- In the same pan, add the oil and roast chana dal,urad dal and coriander seeds until the raw smell subsides and turn golden. Set aside to cool.
- Add the tamarind, red chillies and coconut , dry roast them as well. Set aside to cool.
- Add all the roasted ingredients to a blender and add pinch of asafoetida and salt.
- Blend to fine powder and store in dry airtight jar.
- Enjoy it with hot rice and ghee.
